I have two vinegars brewin' but I'm afraid to open them. I tried opening one a year ago and lost half the bottle as it splurted all over the kitchen. Now I look at the them in fear, not daring to disturb their fermenting lives...what do I do?? 😰
Hmmm. As far as I understand, vinegar should not be gassy as an end product. If you didn't burp or let your vinegar breath in the earlier stages (when the apple was fermenting for example) and the bottle has been closed this whole time, this might explain why. Perhaps take the bottle outside, trying not to disturb the contents in the process. Try to gently release the gas by opening the lid by the tiniest amount. As soon as it gets too much, close it again. It might take a bit of time but its the only way you'll find out whether the vinegar inside is any good! If it isn't, dust yourself off and start again! I can recommend a good YouTube video if you need some visual guidance.
Thank you LF for your sound advice. I opened the bottle over the kitchen sink after several months of a Kombucha + added herbs and spices experiment. I'm very sure it tastes amazing but unfortunately the fermentation has gone beyond the safe level of experimentation, and I am now expecting an explosion in the kitchen any time soon. Yes! It was quite spectacular and has cemented a fear of vinegar fermentation in me which I would like to overcome before they become unusable.
